@blueovaltrucks I wouldn’t give the salad too long – the cucumbers will wilt after a couple of days. The dressing can keep for hmm.. maybe 5 days? I wouldn’t leave it longer than a week, with the coconut milk.

  5. blueovaltrucks says:

How long can the dressing hold in the fridge for? Also, how long can the salad last in the fridge too?

Also, I think I made too much sauce.. or was I suppose to take some out and then add the cucumber? I didn’t do that.. ha ha.. I hope that’s OK. I want to try your Taco recipe next. :)
    Keep up the good work!

@amyburns1999 absolutely, thanks for the backup :) not only do you not have to worry about all the pesticides, herbicides, chemical fertilizers, but you get more nutrients in your produce! hope you have an awesome camping trip :)

Probably preaching to the choir but…the lemon (along with all produce) should be organic. I know it can get expensive but if I use the rind in a recipe I search out organic to make sure I’m not eating up pesticides. I know, I know, I’m preaching to the choir! I can’t wait to try this yummy looking recipe. I think I’ll take it camping!

@RMDelete Thanks for the feedback – I do have the recipe posted on my website if you want to skip the videos, but I’ll try to give the link at the beginning of the video as well as at the end. Hope you enjoy the salad!

  16. RMDelete says:

ooooooooooookaaay…. honestly looks like a good recipe but this video was about 5 minutes too long… I had to fast forward about 8 times to just get the recipe…

@jmckn21 I rarely measure, and try to give the approximate amount in the recipes but I also want to encourage people to be creative in the kitchen. If you experiment and learn to work with food and how it goes together, you can free yourself from needing recipes. I almost always leave salt ‘to taste’ because there are lots of people who prefer to use none or extremely little.

  18. jmckn21 says:

Do you believe in measuring out ingredients for any of your recipes?
Most of the recipe seems to be taste!

  19. healthyvegan says:

excellent, fresh cucumbers are SO nice! have fun with them, they are also a great addition to a smoothie!

  21. healthyvegan says:

Thanks, that’s a good idea. I forget why I didn’t do that this time. Probably because I have done it before and I sometimes think people might get tired of watching me juice lemons, but I think you’re absolutely right. Thanks!

  22. jmdinny30 says:

These videos of yours would be more interesting if you showed yourself juicing the lemon.
